Coconut sugar is derived from the sweet nutritious sap of the unopened Coconut blossoms. Small community farmers collect the fresh sap in short time periods to maintain its freshness and high quality. It is thickened under controlled heat to avoid over cooking which would affect the nutrients and acidity. Our coconut sugar is rich and moist, light brown in color, and has a pleasant sweetness with a distinct caramel coconut aroma.
Coconut sugar contains only 12 % sugars, and has a nutritional content far beyond all other available sweeteners; it is high in Potassium, Magnesium, Zinc and Iron, it is a natural source of vitamins B1, B2, B3, B6 and C and amino acids (specially glutamic acid). Extremely low glycemic (35!) to favor weight control, people with hypoglycemia and diabetes.
